Wine from spontaneous co-fermentation in carbonic maceration, a winemaking process associated with French Beaujolais wines. The grapes are whole-cluster fermented in a carbon dioxide atmosphere. This type of fermentation produces young wines, very fruity and light, with a characteristic bright neon color.

Vinos Pijoan was born from the hand of Pau Pijoan, a Mexican of Catalan origin, a veterinary researcher by profession, who embarked on an adventure that would completely change his path.

Without boasting of being an oenologist, his long career as a scientist laid the foundations for a disciplined and methodical study in the art of making wine.

The great advantage of a family winery is expressed in the importance of the different voices that speak through the wine, which beyond representing a product, represent a dialogue. Wine is another member of our family, a form of expression for each voice involved, where the result of the fruit and hand of the person who makes it is bottled telling a story.

At Vinos Pijoan our philosophy is to create honest wines that incorporate the history of our terroir as a region, reflecting its aridity, its morning fogs, the winds and the heat of the afternoon, followed by cold and crisp nights. Having a code of honesty with our drinkers. We seek to create wines that reveal the personality of our region from our perspective.
