WHAT WE BELIEVE

Pavot fr. /Pavo/

From the french for Poppy, the flower, we believe wine should be complex but not complicated. Every vintage is unique, and has something to say. It’s our job to guide that story and allow it to shine in the best of ways.

In the vineyard we think nature knows best, and let her do the work. That means sourcing quality fruit from growers who farm using the best biodynamic and organic practices – eliminating the use of synthetic chemicals and truly farming the most honest and regenerative way. We love our grapes, believe that great wines are made in the vineyard and make decisions with respect to our planet before all else.

In the cellar, we believe that less is more. We look to highlight the wine by guiding it along the path of its terroir and style that make its region of origin unique. We’re low intervention winemakers that maintain the beautiful polish that is expected of premium California wine.

In the bottle, we believe in transparency. Wine is complicated enough - labels shouldn’t require a degree to understand. We put what we used in the cellar right on the bottle and don’t hide our wine making techniques.

In the glass, we want wines that you’re not afraid to open, now or later. The young always tell the truth and are unashamed, while the old show off their wisdom. Life’s too short not to enjoy, and we think wine should be the same way.

Santé!
