Patrick Cappiello and Pax Mahle, two veterans of California's wine scene, believe in hand-crafted wines made in the spirit of old California—honest, unpretentious, and built for everyday drinking. Cappiello made his mark in New York City's restaurant world as a sommelier since 2001, earning accolades as "Sommelier of the Year 2014" by Food & Wine Magazine and "Wine Person of the Year 2014" by Imbibe Magazine. After decades of curating wine cellars at acclaimed establishments like TriBeCa Grill, Veritas, and GILT, he traded his sommelier's bowtie for winemaker's boots, moving west in 2017 to launch Monte Rio Cellars. Mahle, a self-taught winemaker who started as a corporate wine buyer for Dean & DeLuca in 1997, built his reputation with Pax Wine Cellars beginning in 2000, becoming one of California's leading producers of cool-climate Syrah. The duo launched Skull Wines as a collaboration, working with family-owned, organically farmed vineyards and embracing simple winemaking—spontaneous fermentations with whole cluster grapes in stainless steel and concrete, aging in neutral oak barrels. Named for its minimalist approach, Skull Wines produces just four basic but never boring styles: Red, White, Rosé and Sparkling, all with minimalist labels and minimal price tags. Their signature "Pink Wine" features a playful cold-activated label where the skull turns bright pink when chilled—a whimsical touch that reflects their philosophy of making wines that don't take themselves too seriously but deliver serious quality. Together, Cappiello and Mahle have established Skull Wines as a leader among California's new generation of winemakers who prioritize authenticity and drinkability over pretension, proving that great wine doesn't need grand gestures.
